Dry Aged

Dry aging is a method of aging and curing, considered a true art, that is performed dry, involving a long period of humidity-controlled refrigeration.

The result is an exceptionally tender product with a firm texture, marbled to perfection and with a unique aroma, which makes meat subjected to this type of treatment in high demand. The intense and strong flavor is accompanied by a dark red color. The meat's organoleptic qualities are excellent due to the special curing and aging process it undergoes.

In ancient times, this method consisted of air-drying the meat, so as to deprive it of water, allowing it to be stored for a longer time in an excellent way. If at one time the skill of the butcher or hunter was at the mercy of the weather conditions, which could not always be perfectly controlled, today cold storage rooms for curing take care of everything. They allow the constant monitoring of the parameters, essential for the optimal performance of the process.

The meat have to mature slowly in an environment with established and controlled parameters (temperature, humidity and ph), to give it softness, intensify its taste and make it more digestible.

To ensure the best food safety and the perfect quality of execution and preservation of the product, the Dry Age cell is equipped with a Phmeter capable of detecting any alterations in Ph of the meat and UV -C germicidal lamps capable of preventing bacterial proliferation in the meat, guaranteeing its safety even for very long maturation periods. A sophisticated system, with 4.0 technology, is able to supervise the curing process even remotely and thus promptly alert the operator in case of alterations in parameters.

The curing period varies according to the type of meat, it can last from 30 to 60 days, but it can be as long as 150 days for lovers of the most important flavors. At the end of the process, the matured meat is dark and intense in color and decreased in weight by 30%-10%, due to water loss. This process is the secret to the tenderness and much more intense and juicy flavor of our cuts of meat, true high-quality products.
